Yessss, another long drawn out lag in my posts! Oopsies! I hope you haven’t missed me too terribly! I’ve been sucked into the doctor visits, nursery preparations and just general meh-ness of the past few weeks and haven’t been too inspired to write anything much. Most I’ve done has been cook up some new recipes that I found on Pinterest, like this one for carmelized chicken…OH MY WORD it was seriously the most delicious chicken I’ve ever made! Here’s a pic:
BEST CHICKEN EVER!!
Here’s the proper recipe:
2 1/2 lbs chicken legs
1 2/3 tablespoons olive oil (to help it stop sticking to the pan)
1/2 cup soy sauce
1 2/3 tablespoons ketchup
3/4 cup honey
2 -3 garlic cloves, minced
salt and pepper to taste
1. Preheat oven to 350F2. Place chicken in a 9×13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.
Do it like I did, follow the directions and then make yet another batch of the sauce, and baste the chicken halfway through the cooking process so you’ve got an extra dose of that ridiculously yummy sauce over everything. Because, I can’t do anything the normal way, I’ve always got to push the envelope! LOL
I also made a great version of Salisbury Steak using a couple of recipes that I found online, I kind of made a mish mosh of the two recipes and went for it! It was so good, I forgot to take a picture! I pretty much followed this recipe but omitted the ground turkey and went for all 85% lean ground beef.
I don’t know how I’m going to keep all the good meals coming with a newborn in the house, my cooking is going to have to take a backseat for a while I think. Hopefully I will be able to resume cooking new and interesting stuff in the near future afterwards. I’m scheduled for a C-Section on Oct 23rd due to the little one being firmly in the breech position so we’ll see what happens! Think I’m nervous now??? I can’t imagine how rattled I’m going to be the day of!! YIKES!!

Well, a lot has gone on since my last update! I passed the dreaded 3 hour glucose test with flying colors thankfully! YAY! I’m soo glad I don’t have to give up my occasional sip of chocolate milk OR my nightly bowl of junky cereal! J So far I’ve gained about 10 lbs and I’m a little over 7 months pregnant right now and boyyy am I getting uncomfortable! It’s hard to sit up in bed and if I dare to wear sneakers, forget about bending over to tie them haha.. All the squirming is getting weird too, it seems like he has a foot lodged in my ribcage and is trying to do some really interesting acrobatics in there! During last week’s ultrasound, he was looking DIRECTLY at all of us!!! No profile shot for this guy!! He was like “You talking about me???” So weird!! Lol. We also found out that at 31 weeks he’s still in a breech position, so they are scheduling me for a c-section because it’s good to have it scheduled ahead of time just in case he doesn’t flip down and I need one. Even though I’m terrified of EVERY way of getting the baby out, I’m strangely ok with the controlled aspect of knowing what day and when everything is going to go on. That makes the control freak in me much happier kind of knowing what’s going to go on, rather than having it all out of control and not knowing a thing. Does that make sense? I know, I’m strange!! I’m really getting scared now that it’s getting down to the wire here!!
Ok, enough of my pregnancy ramblings…
I’ve made a few good meals, Turkey Schnitzels with dill sauce, roast beef with HOMEMADE gravy (I’ve always been chicken to make gravy myself!!) and last night I made Sausage, Peppers, Potatoes and Onions! That came out great but we scarfed it down so quickly, I forgot to take a picture of it! Oopsies!

I’ve been hooked on Pinterest lately and I’ve found some really amazing tips and recipes on there, I will definitely be posting more when I try some of them. At first I was reluctant to check out Pinterest, I thought it was stupid just pinning pictures of things I like, I didn’t get it. But then, the lightbulb went on and UH OH…noww I get it! Very dangerous!
Is anyone else looking forward to all the Fall TV starting??? I AM! I AM!! Even though I probably won’t have much time for any of it once the baby is here! Thank GOD for the DVR! I’m particularly excited about Vampire Diaries starting again! Can’t wait!
That dessert last week was simply amazing! My Husband and friends all enjoyed it and now, 3 days later, we are stilllll eating it! Of course it’s not as fresh as it once was, but damn is it good. Delicious!! Although, I wonder if it might have been better with 2 boxes of chocolate chip cookie mix on the bottom? That layer was rather thin and hard to spread out, but it rose nicely when baked so I guess it was ok after all. A small piece was all that was needed to satisfy!
This week’s culinary adventures consist of baked garlic and herb chicken drumsticks with roasted Brussels sprouts and baked potatoes. Did I take a picture of said dinner? Um no.. I kinda forgot. You can certainly SMELL the chicken in the house still! Unfortunately, it’s still hot and humid outside and I can’t open the windows to air out the house. Tonight, I will be making turkey schnitzels with peas, potatoes with lovely dill sauce. I will definitely be taking pictures of that for another post. It’s a recipe my father came up with, though I started making it with ground turkey instead of beef and loved it so much, I decided to keep making it that way.
My parents are on a road trip this week so we have a little lodger in the house, Katy! She is my quality control checker for all my meals. She likes to give the paw of approval to whatever I cook. She might be mostly deaf and blind in one eye, but she still has good taste!

It was pretty darn tasty, if I don’t say so myself. I didn’t really make anything else that was pretty enough to take pictures of. Please excuse my dirty oven (hopefully you didn’t notice it before I said anything, but now you’re going to go look again hmm, should have kept my mouth shut lol) It’s overdue for a cleaning! I’m having some friends over tonight and I am really looking forward to making a new dessert. Everyone who knows me knows I have ZERO skills in the baking department, I mean I burn SLICE AND BAKE cookies for god’s sake! My husband is the baker in the family, he never burns a thing. Jerk. Kidding!! Love ya honey!! Anyhoo, I’m making a chocolate chip, Oreo, brownie cookie bars! Yes, you read that right, allllll of them in one pan! Back to the preggo talk for a hot minute, I had my Glucose Tolerance test yesterday and had to drink a lovely bottle of this concoction:
Doesn’t it look tasty? The first sip isn’t so bad, it’s like a super sweet orange drink that tasted pretty good since I was really thirsty by this time, but after an hour of sitting there, I began to get a horrible headache and felt like I was hungover the rest of the day! Yuck! Hopefully I passed and won’t have to go back for the 3 hour one. I don’t want to drink that stuff again really! Keep your fingers crossed for me! Oh, and that Boppy body pillow is just….meh. It does help a bit but I think it’s kind of annoying to keep straight and when you’re flipping around from side to side in bed it get’s irritating. Oh well, can’t return it either! Hopefully I will get more comfy with it as the days go on.
Is it time to bake yet????
Soo I broke down and did it…I went out yesterday and bought a maternity body pillow. At nearly 7 months pregnant, I am really getting uncomfortable when I sleep, either my knees hurt or I wake up with a backache. I am really only comfortable on my back, but after reading how you really shouldn’t sleep on your back after 25 weeks, it freaks me out if I wake up like that! Am I hurting the baby?? Eek!! SO, after some extensive research, I decided upon the Boppy Body Pillow. I used it last night for the first time and I have to say, I think it did help, although NOTHING seems to stop the 6-6:30 am pee trip! It’s a full body pillow that actually fits under the covers with my Husband and isn’t taking up too much room. Half of it goes between your knees and the other half acts as a pillow. I do feel pretty comfy when sleeping on it so we’ll see if I’m still using it by the end of this week. Anyone else use a body pillow while pregnant?
Has anyone seen the show “I’m Pregnant and so is my Teen”? I know it’s another of those ridiculous reality shows and I rarely watch that kind of stuff, (OK the Kardashians doesn’t count!!) but I have never seen something as disgusting as the umbilical cord stump!!!! It looks like a jellyfish with black tentacles!!!! For the love of PETE, DO NOT Google it! Consider yourself warned! You did it anyway didn’t you?? It’s pretty gnarly right? *shudder*
My culinary adventures this week so far have consisted of Pepper Steak last night, and tonight, is meatloaf, corn and roasted Italian potatoes. I shall post some pictures later on. Tell me you don’t want to run to the kitchen and make some of those suckers right now! Doesn’t everyone jump from talking about umbilical cord stumps to dinner? Oh yeah, this is how my brain works lately.
So, as of today, I’m 27 weeks pregnant, and wondering.. is this kid doing somersaults wearing spiky golf shoes in there? And hello…can you please stop kicking me in the crotch? It’s rather disconcerting and it makes me jump in my chair, and that kinda looks stupid!
This little guy in my belly sure likes to make himself known now. Long gone are the days of faint thumping or little teeny flutters that I was pretty sure were gas bubbles! They’ve been replaced with kicks and punches and all sorts of acrobatics! I wish I could see what he was doing in there! It’s also the week of OMFG I want chocolate milk and bagels like NOW!! Yes, I had given up on the so called pregnancy cravings because I hadn’t really craved anything specific for a couple of weeks. I thought I was so over all that, only to find myself chugging the last few precious drops of my tiny bottle of Nestle`s Quik like someone who’s walked 10 miles in the desert !!! I had to satisfy my continuing cravings for it with a packet of Chocolate Instant Breakfast. THE HORROR!! Not bad, but didn’t quite do the trick for me. We all know where I’m going later on today..yaknowhatimean?
I’m mainly glad that the STUFFY NOSE FROM HELL has gotten much, much more manageable. If you’d asked me about it a couple of months ago, I probably would have ripped your head off. I mean, how much more difficult can being pregnant be? If you’re lucky enough to not be puking 24/7, you can’t breathe normally 24/7! It’s extremely frustrating being stuffed up night and day and HEAVEN FORBID you get anywhere near a prone position, because if you like taking in all that lovely oxygen, you’re screwed! I went to the Doctor in utter desperation about it and left with a prescription for allergy medicine since if I was able to breathe normally for more than FIVE minutes, I’d have sneezing fits so bad, they would just take care of all that lovely breathing for me themselves. So, my advice to all you lovely ladies who come across this: BUY A TRUCKLOAD OF BREATHE RIGHT ADVANCED NOSE STRIPS! Yes, that’s right, you’re going to look like a pregnant linebacker while wearing them, but hell, if it enables you to breathe just enough to frigging sleep, you’ll be sooo damn happy. I certainly was!
UGGH..3:11am and now I want chocolate milk! Mmmmmmmm…..lemme get my shoes, 7/11 is still open isn’t it?
Who in the world would have thunk this one? After finding out in March that I was expecting (much to my shock I might add!!)
